>>1329185Welp, the English wiki doesn't have an overview like that, so here the German one:
https://de.wikipedia.org/wiki/Botulismus#ErregerIt says there that the different types of the toxin have different strengths
But yeah, spoiled canned food containing it was a thing here too, but not that big, and maybe in the 1920s or so
>>1329192Haha yeah the heatwave we've been having here since April makes the tomatoes produce like crazy this year (harvest of Blakc Cherry started unusually early on around 10th of June), another 5kg are currently on my stove right now too
I never really noticed a big taste degradation from freezing, maybe after a year or so...
Also, if you use a Weckglas, it vaccum seals itself when cooling down, after which you can take off the clamp and it should still be closed. If any spoilage creating gases occurred, then it'd pop open after a while, that's when you know something went bad.
And yeah of course other things like moulds can appear too if you weren't working sterile enough, but you'll see those
I only canned my tomatoes once (using a 10 litre water pot) two years back, and eh I figured it's not worth the hassle if you have enough freezer space
