The V- shape is rather narrow and long. The board is mounted at a bit of an angle around your head height. The tips of the V face you and up. You lift the rabbit up and place its head above the board while sliding its neck down the V-shape. The V-shape will be so narrow that the head of the rabbit can't slip down. Once the neck is as far as it will go into the V-shape you yank down hard to snap its neck.
With wild rabbits you can actually do this by hand with just a jerk and you don't need the V-shaped board, but with larger breeds like New Zealand you'll need the board or really strong hands. I recommend the board.
Some people have another board that latches the rabbits head into place, but you don't really need that. You can use your hand on the under side to perform the same function and you can do more kills in less time without the second board.
The one in this image is mounted too low. You need to mount them at your head height so that you have better leverage and weight. It makes it much easier. Make sure the board is well-mounted and doesn't move.
