>>2222488All parts of the dandelion are edible. The leaves can be consumed in salads or sautéed (but are best when they are collected before flowers appear). The flowerbuds can be collected just before they open, and then boiled or pickled. The yellow flowers can be eaten raw as well, but I like to batter and fry them. The roots can be roasted and ground to make a coffee substitute.
I find dandelion greens to be too bitter for my tastes, but the flower fritters are excellent.
