My first time doing the Camino, when staying in Caldas del Rey I met this German boss well into his 70s that had been hiking the Camino for many years, starting everywhere from Paris, Germany and I think Italy too. It's just walking, can't do 30 or 40km days? Then do your own pace and hike 10 or 15km if you have to. Yeah days with bigger elevation gain takes a higher toll on your body but it despite the potential suffer your body adapts, it gets easier as days go.
