There are quite a few lower mountains in the Himalayas that are virgin or have only been climbed a few times successfully:
Both Khakabo Razi and Gamlang Razi are extremely remote and have only been climbed twice and once respectively.
Just to the North, Kawagebo in China is one of the most iconic mountains in the region and has never been climbed because after numerous unsuccessful (and deadly) attempts in the 80s and 90s the local authorities banned climbing the mountain.
Antarctica has a bunch of extreme peaks like Mount Epperly that have only been submitted a handful of times.
