Diet off the trail, or on it? When I'm off the trail i eat a lot of simple foods. Meat and vegetables like mum used to make, roast dinner, fish and a rice cake. Stuff like that. For lunch sometimes I just eat a bit of smoked salmon. I usually end up un-intentionally fasting for most of the day, only really eating breakfast and dinner.
As for on the trail, I just eat a lot of nuts, cheese, salami, rice and chocolate, haha!
