I always go fishing when camping so one place I could recommend is Mullaroo/Ned's corner near the SA border. I put it on the Community walk map if you're interested. Pic related, it's all tranquil, small creeks like this, and you'll be lucky to run into another person if you camp there for a week. No phone reception though so make sure your car is all sweet or it's a long walk to the nearest property for help.
