Goretex I don't recommend as it rots the leather when it gets trapped between layers.
I got sick of buying expensive cushion shoes that "wear" out. For the most part I use boat shoes for a cheaper minimalist shoe. Trying leather bramfords soon, but wouldn't use it mountaineering. I would go a lighter boot and bring plenty of wool socks, or maybe a neoprene boot sock. No way you're going to avoid not getting wet through sweat or conditions. Better to just have something dry to replace it if it isn't farm wellies.
You need to figure out what works for you though.
Use wool socks. I'd go darn tough for warranty. You can get good discounts from govx it you've previously served in fire, law, ems, military.
Try something like outdoor research gaiters if you need leg protection without the bulk.
Only boots I still use are wellies and Norwegian M77 since it's light.
