Baofengs are junk, they desense real bad in high RF environments. In most areas you'd probably be fine.
Even my Motorolas will overload. Some towers have so much VHF activity on them I can't even use that radio on the site... have to go UHF or state (800meg) there. Leads to a bit of a "donut-hole" coverage pattern around the site. Digital is real noticeable when that starts to happen; FM/FMN isn't quite as bad.
In general, it shouldn't be a big deal if you're using a decent radio in a non-RF-dense environment. The biggest issue using a portable hooked up to a mobile antenna is the fact that the antenna connector on the portable isn't designed for repeated mate-disconnect cycles, and they're generally just inconvenient with all the wiring.
If you're regularly operating mobile, it's worth putting in a mobile radio.
