I live somewhere that gets very cold and windy, so dogs with thin/short coats are out of the question for hiking. My first dog that I picked out and trained as a child was an English Springer Spaniel. He was a great dog and very easy to train.
In general, look for dogs that want to please their owner, those are the easiest to train. My girlfriend has Chesapeake Bay Retrievers and those dogs are beautiful but stubborn and strong-willed as fuck, would not recommend to a first timer.
My favorite dog I've ever owned (and current) is just a mutt that I adopted from a local shelter.
