7.62x39mm is kind of like a hot .30-30 round in terms of ballistics, and enough .30-30's in a bear will probably drop him, eventually.
5.45x39mm has much flatter trajectory though, it's also lighter and kicks less. It'd be much easier to stay on target with a an AK-74 over an AKM/AK-47.
Now, if I were to go and actually HUNT for bear, I'd probably pick some something like a .338 Lapua rifle, and shoot from a decent distance, the AK is just much better to defend against a charging bear.
