Any pleistocene megafauna. Obviously mammoths and elasmotherium would be incredible hunts, and Irish Elk (Megaloceros) would be the best for trophy hunters that wanna display a big rack.
Me, though, I'd want to hunt the carnivores. Homotherium and Cave Bears.
