im no expert but the basics i use are: grind on side A of the blade until you get a burr going on side B, then flip over and grind side B until you have a burr on side A, then flip over and grind a very gentle pass or two on side A, just enough to remove the burr without putting a burr back on side B. Now move up to the next grit and repeat.
