The haversack is a generic continental style, made out of retired tent canvas with the intent of being more civilian, harder wearing, and typical enough for me to use from 16th-18thC kits, unlike say, my specific repro'd British haversack (pic related) which is an exact duplicate of an extant piece, but not as hardy.
For tapestry brocade, most major fabric stores like Jo-Annes, Handcock fabrics etc, have upholstery sections with good selections. Just be careful about pattern if you want something period.
