But it's pretty fucking sketchy over 80m/h. One, the engine isn't very happy wrung out like that, and two ... fucking knobbies on pavement at 80+m/h.
A better idea would be to put a better set of tires on the bike for the street, and gear up your final drive ratio so you're not thrashing the engine so hard at speed. I know if I sumo'd my 525 I'd lose my license, I have a hard enough time keeping speeds reasonable with knobblies on.
But for the cost of a complete set of wheels/rims, and the hassle of swapping wheelsets out every time I switch between a street/commute ride to a dirt/dualsport ride, it's almost worth just picking up another motorcycle.
