I've gone wildcamping in Schwarzwald for a few days, as long as you're not a retard most forest rangers won't fine you if you get caught. The few times that I did get caught wildcamping around yurop the ranger just told me to pack up asap and not leave any trash or make fires. Other than that Northern scandinavia is my go to summer holiday every year, so yeah that should be on your list.
