I should have posted at least a before and after, but here is what ~6 1/2 lbs (unprocessed) of NM chile turns into after being roasted, peeled and cleaned. The result is about 3lbs of pure goodness. Grown in my garden, of course, though I probably am going to have to put a 40lb bag from a local farm up this year. (I hate processing 40lb sacks all at once.) The plants will produce until first freeze, which last year, was towards the last half of November.
If the way my hands are burning is any indication, that was a pretty hot batch that I just processed.
