I don't know about ultralight brands but tents from MSR are plenty good for the Camino, they are light and sturdy. For sleeping bags just go to trekkinn and choose your poison.
Since you've places where to buy food or eat you are pretty much ultralight by default since you don't need to carry that much food at all times so unless you're packing your kitchen sink with you you should be within a reasonable light weight.
Having comfortable footwear and making sure you don't get blisters should be your main focus.
