get whatever you want. stainless steel is lower maintenance but will still rust. I'd recommend a bolt gun, ideally with a floated (only attached at the receiver of the gun, nowhere else) barrel.
leverguns will be fine too but are generally less accurate at longer ranges because of how their barrel is usually (not always) attached. any brand is fine; pick one that has the features you want.
whatever you choose I strongly recommend it has built in iron sights. most all are drilled and tapped for scope mounts but not all come with sights, they're becoming less and less common.
caliber does not matter. I'd recommend .30-30 winchester, .308 winchester or .30-06 springfield as all are common, easily available and sufficiently powerful. .30-30 tends to do poorly in long open areas, specifically because of bullet drop and usually being chambered in leverguns. .270 and .240 are also decent choices but will perform more poorly in wooded areas because they can be deflected more easily by sticks and grass in the way due to being (usually) less massive projectiles. do some research and choose what's right for you.
