If not planning to use a knife, I take Cold Steel SRK. It's pretty strong, still light enough to be easily carried. Gutting a fish or making a fire is not easy but it can be done. Most importantly SRK is big enough to be used for hacking and light batoning. That means I can build shelter frame without any additional tools like saws or axes. Size is good also for collecting other shelter material like branches or grass.
If I take Bahco Laplander with me, then strong folder will do, usually RAT 1. My EDC is basic aluminium scaled SAK.
