Leave everything else intact, but cut slits down the side every inch or so for better cooking>Marinade in milk and pepper like catfish for 30 minutes>make breading of flower, cornmeal, garlic, and either old bay or season salt >coat both the inside and outside in breading>Fry in peanut oil 7min on both sides>Serve with mashed potatoes and beer.
