Wool, like flannel, gets softer with use. You're also probably buying cheaper, coarser materials.
Cashmere wool comes from cashmere goats and is not the same as regular wool. Angora comes from rabbits. Merino wool comes from a specific type of sheep. Different wools have different qualities, and most people buy the cheapest stuff with the coarsest weave.
There's also the possibility that you've got overly sensitive skin from being used to wearing nothing but the softest material available, aka being a little bitch. That would cover most people nowadays.
