I done jerky in the oven once. Marinated and spiced that shit beautifully, took all fucking day, and it didn't come out good. The lowest oven temp was still too high so it slowly baked the jerks while it dried them, and it came out kind of crumbly and dirt-tasting. I also put it on "convection" to help it dry faster but this probably had more of a cooking effect. It was tricky because convection doesn't work unless the oven door was closed, so in addition to propping the door open slightly to let heat and moisture out, I had to find the little button trigger and fix that down so the fan would turn without the door being closed.
Mural of the story: I won't try this again until I own a food dehydrator.
