Get the biggest eksy you can find and fill up 2/3rds of it with frozen 2l (or bigger if possible) water bottles.
Freeze all the food you don't intend on using in the first few days.
Stick it in the boot and cover it with blankets, only open it twice a day and it will last a week in 30C daytime temps if the esky is big enough.
That's how I do car camping with only fresh food.
