Shavers fork is really pretty, so is seneca creek near spruce knob and both have fishies and clean water.
Try a stream with cleaner water in a more remote area.

There's much more interesting trails here than the AT but as you wish!
There's shelters I think in Cranberry Wilderness and parts of Tea Creek Backcountry. Way more scenic than AT (further west).
