I sometimes use an ALICE pack for hiking and camping, and i use an ALICE webbing system like you posted for hunting and fucking around innawoods. The BIG benefit of it over a backpack is the butt bag is big enough to carry whatever little gear you need when youre hunting and because it isnt on your back it wont hang up on tree branches and fences and shit while trying to move quietly under stuff. I wear that and a SAW ammo bag (picrel) as a general dump pouch, which is good for collecting mushrooms, nuts, fossils or whatever. Even fits a couple squirrels. Pop a canteen on as well and youre all good. Not really any need to get all the other pouches and things, but go for it if it makes you happy.
