After removal of head, tail, paws, hide, and entrails. Cut in half long ways, boil in seasoned water for 15 minutes. I like to use Johnny's seasoning, black pepper, and garlic powder. Use just enough water to cover your squirrel halves.
After the boil, keep the water. Now you can either use a charcoal grill, or your oven on broil. When the squirrel halves start to look dry, dip them in the water you saved from the boil, put back on heat. Repeat about 3 or 4 times, then enjoy.
