One of my favourite first-night meals is teriyaki chicken. Use boneless chicken thighs (not breast, sorry it just doesn't cut it). Cut them up and put them on sticks and refrigerate them with teriyaki marinade. The trick is to freeze them solid and then pack them out still frozen in an insulated cooler bag dealie. By dinner they'll still be cold and partially frozen and ready for the coals. Lovely dinner to start a multi-day trip.
