I like Jim Baird.
He mostly does canoe trip videos in Canadian wilderness that usually feature running rapids and fishing along with camping and occasional bushcraft stuff. The Yukon river one is particularly good (it's also the only one with 1M+ views so is easy to find). Yeah he shills gear but otherwise it's pretty much straightforward documenting travels. I don't like his earlier videos so much but he seems to have settled on a style that I really like. His videos have just the right pacing to where roughly a day or so of travel is compressed into about 30-40 minutes. The production and editing is competent but not so much so that it feels like he loves filming and editing more than he loves just being outdoors.
