I would recommend going in early May right when the park opens - the place will be dead, cabins/hotel rooms will be readily available without reservation and they'll be super cheap. The only downside is that some of the park roads may not be open depending on how bad the winter was that year (when I did this almost the entire southern half the park was under snow still). Either way easily the best time to go if you don't want to feel like you're in Epcot the whole time.
