These are my fave brand wrapper, mail order- they are worth it. The pack has enough for 1lb of meat.
Use 80/20 ground venison / pork fat or other ground game.
Sautee 4 cups of sliced napa cabbage until volume is reduced significantly and set aside in strainer to cool. Mince about 3 shittake mushrooms and set in a bowl. Chop a bundle of green onions into the bowl. Mince a thumb size piece of ginger, and a couple cloves of garlic and add them to the bowl. Now that the cabbage has cooled, press it in the strainer to force our excess water, then add the cabbage to the bowl. Dump a beaten egg into the bowl, as well as a couple spoonfuls of onions sauce (good shit not fucking cornsyrup and salt), a couple spoons of mirin or rice wine, a spoon of sesame oil, and a spoon of fish sauce. Crack in some pepper and salt it. Finally, add a pound of your ground meat and mix it thoroughly with your hands until its like a paste.
Wisk another egg into a bowl. Place a spoon of your filling into the center of a wrapper, in an ovalish shape. Dip your fingers into the egg and wipe it around the outside of the wrapper. Pinch it shut from one end to the other in pleats. Just start doing them and you will figure it out after a few. This recipe will probably use all 42 of the wrappers in the pack.
To cook, heat a pot of salted water to a boil and toss in a handful of dumplings at a time. When they float (2-4 minutes) remove them with a slotted spoon into a serving dish. To make potstickers, heat some canola oil in a cast iron pan until HOT and place some dumplings in on their side. Pull when brown, typically you only fry one side but I like doing both.
For a good sauce, mix about half a cup of rice vinegar with a few spoons of onions sauce, a few of sugar, about a thumb size piece of ginger- minced, and a clove if garlic minced.
they go good with white rice or fried rice.
