Pic related is around 2900 calories and if you buy a case of 9 on ebay you can get them for 19 per. To get 2500 calories worth of mountain house we are talking 55 dollars, maybe 45 if you get a great deal bulk.

What you get with the military ration is not just food but a days worth of food that has been tested to be nutritionally complete, does not require any heating (in the case of this ration), come with drink mixes, spoons, toilet paper, all the shit you need right there in one compacted pouch of stuff, packaging that doesn't expire for years. You don't even need a mess kit for this shit, just rip it open. You are benefitting from years of research.
If you want to try to assemble a better ration out of bullshit in your pantry, go ahead, but you probably aren't going to be as thorough as the military. If you aren't going to do military rations the most patrician option is to pack bags of grains like oats and rice, this is the most efficient and cheapest option but the most prep work.
