After wrapping the bear bagging cord around a tree about two times, I use 3-4 consecutive half hitches (pic related) to secure the cord to itself. It looks messy, but it's perfectly secure and easy for cold hands (i.e., me when I've just woken up and am starving for breakfast) to undo.
For actually tying the bear bag onto the cord, I use a figure-8 follow through, like what you use to tie into the rope for climbing.
I use the Pitzen knot for tying on a fly to my tippet when flyfishing, and I use what I think is called a sugeon's knot to tie my tippet to my leader.
