Sounds like you know what you're doing, but are you wanting to set up a business? If so there are probably food and safety specs you will have to meet. If not, you can get a standard meat slicer. Commercial slicers can get expensive, (some priced $1600) but if you're just making a home set-up I recommend getting a sturdy 70's slicer that will last you forever and will only cost $5-$25 bucks depending on where you get it. (I picked up one for $5 and it runs like a juggernaut)
Also this book should help you answer some questions you may have. Page 58 and on goes into equipment for set-up.
