Realistically you're never going to completely subsist off a homestead, but instead as a means to save money. Perhaps you can devote part of the property to alfalfa, or another large low maintenance grain for compost and feeding chickens. The rest can rotate crops with nitrogen fixing plants. The yield won't be as high but it could be more effective at being profitable (i.e keeping family food costs down). If that's not enough to offset the loss of a spouse's income, maybe it's enough for one of the parents to take less hours or work part time, allowing more time with the kids and at home.
