the Brusletto Bamse has served my very well for at least 18 years. Good and sturdy knife. I don't hunt, so the whole skinning/butchering part is unnecessary for me (blood-canal or what you call it...)...
The Fällknive F1 is a fucking beast. I've manhandled it for years through general campwork, batoning and even hacking through ice. Indestructible if you manage to set it up with a nice convex edge and keep it that way. Broadest back I've come across so far. Awesome knife.
The little buck-thingie I keep around my neck in a sling (while in camp) for general food-prep and small camp-work. Niftly little fucker -- scandi grind.
Also, for show, my eldest daughters Helle "scout knife". Indestructible cheap shit -- but holds up it's own in kids' hands.
