You need to completely trust your other paddler, both need to know their strokes and keep paddling no matter what, and you can't always take a direct route (if you go parallel to the waves, you're dead.)
Even if you were experienced with these things, which you are self-admittedly not, she is not going to be able to handle it.
I went with 5 friends, my buddy and his girl in my canoe, and we paddled out there while she was in the mid of the canoe chilling. On the way back, she wanted to try paddling and couldn't make it 3km across a lake in very mild wind.
Now, if you still really want to take this chance just to get your dick wet, I think you're dumb, but I have a good option for you. Just say you don't think she is experienced enough yet to enjoy or complete a trip like this, and tell her you are going to bring her on a simpler trip so she can get some experience first.
There are plenty secluded backcountry campgrounds that aren't very far out. You'll still be taking a risk, but then you can learn some techniques, wow her with that stuff, and just chill out at the campsite for a day or two and leave.
