South Africa is another very good option for outdoor exploration. You've got the option of exploring game parks, or hiking in normal areas that don't have deadly animals (contrary to common belief, there aren't lions roaming the streets, they're contained to zoos and game parks)
It's summer now because Southern hemisphere. An excellent place for a 2 week summer holiday in December or January.
