So when it's fully rigged it looks basically like the left?
Then yeah, the green one would be the mainsail, the pole holding it up would be the Sprit it gets its name from, and the blue sail in the front is the jib or headsail. Sprit sails are 4 sided, so not triangular, but I also don't think you can call them square sails since they aren't square and mounted on spars at the top and bottom? There's probably a special term for it that I don't know.
Do you sometimes have another pole where the red line is? I think that's what you would call the sprit boom, I can't see how you'd sail without the sprit itself.
Basically all the sailing I've ever done is on Bermudan sloop rigs, like the right crayon scribble, which are what tend to be overwhelmingly the most common sailboat setups in north america, my bad for just saying "normal," particularly since there's even other kinds of triangular sails. I was picturing something like that just without bothering to use the boom, which might kind of work but would definitely be pretty weird.
Still, they look pretty straightforward and functional, the one in the back particularly has a really nice shape to it, feels classic. You're the one with experience with them, so if they work then obviously they work and are a viable choice. I think Bermudan rigs are only so popular because everyone wants to copy the fancy racing yachts anyway.
