Freeze-drying is the best food preservation method, keeps all the nutrients intact, gives food a shelf life of many years. I have been using it backpacking since the old days. It always tastes "great" after a long hike, because you're beat and anything warm and filling is good.
Lately I've found it in a new form, at the Boise Co-op, pic related, just plain freeze-dried fruit and vegetable pieces, which can be mixed in with quick oatmeal (fruit) or something ramen-noodle based (vegetables). I have seen this stuff in different packages/names before. Picked these up last time I was in town. Their meant to be eaten as-is, but they re-hydrate just fine in your cup of oatmeal or noodles.
