in one old gala orchard (witch was cut the year actually) i have seen new trees grown from the root system from trees near by, was still gala but the fruits were more like an ufo in shape than the usual shape like this pic

If you do let a rootstock grow into a tree it will give you apples to, but they will be small usually yellow soft acid and deformed.
