A V-strom is a very good bike for touring, they're heavy, but that's not such a bad thing on the highway, just offroad. Most Vstroms are basically Sv650s that are slightly more capable off-road.
Too be clear, despite how they look, Vstroms are not good offroad.
For my kind of touring I'd like something like a bandit 1200 because I'm mostly on road, some gravel, and even a street bike can ride on some grass and make its way down a trail if you're determined.
I don't know a lot about more offroad bikes. DR650 would be cool, but that single thumper isn't great on the highway and despite it's looks, it's no dirtbike.
Tires matter a lot too, unless you darkside (put car tires on motorcycle) you'll eat up tires faster than you think.
Super Tenere is another good and expensive option, it's the competition to the Africa Twin.
A lot of people use the BMW ADVs so I assume they're good, but I don't know about BMWs all that much.
