General staples for most people are the following, lots of which you can buy in bulk from a feed store for farm animals and planting. It will be in large bags and dried for long term storage. You may need hand crank tools to process it (cheap Corona/Victoria Grain Mill or similar brands for your area.)
Corn (use hydrated lime to make nixtamal, google how)

Beans
Oats
Pasta & Noodles
Sugar, honey, sorghum, molasses, & maple syrup
Flour
Salt
Yeast
Potatoes
Sweet Potatoes
Onion Sets
Coffee
Water
Eggs (use hydrated lime to store them for months at room temps, google how; pic related is one of my caches of eggs)
Anything dehydrated or canned (meat, veggies, fruit, fungi, MREs)
