I'm actually from rural Buenos Aires, about 80 kilometers from the city but Corrientes is beautiful and has a lot of /out/ activities it's actually kind of sad that it gets overshadowed by other places in our country. As for the climate, humidity can actually vary a lot. For example this year we went hunting 2 times, one in the middle of January which tends to be the most uncomfortable, it was 40 degrees Celsius but only 30% humidity, so it was pretty nice on the other hand the pic I posted was taken on the start of November which normally would be pretty ok climate but it was in the mid 30s for temp and mid 80s for humidity so it was pretty miserable.
However, as far as I understand you can come to hunt and fish pretty much anytime of the year and our winters are pretty mild for US standards so you'll probably be ok. Small game hunting season is open from early May/late April till late august, fishing I think is also from early May till the end of the year. As for big game hunting, I can't speak for other regions as I've only hunted in Corrientes, but the season for axis deer, antelope, buffalo and boar is open the entire year, but if you go earlier than November most bucks will still have the velvet on.
