>>1614978>1k is enough for shavingIt really depends on the edge angle. I go to an 8k whetstone and white polishing compound for the micro bevel edge. The rest of the main edge bevel just gets whatever is fastest to about 4k whetstone and green polishing compound.
>Also my knife edge seem a bit roundedLike a rolled edge? Take your fingernail and rake it from the spine to off the sharp edge. See if it even remotely catches on something as it crosses off the edge into the air. Do that all along the edge. If it catches on anything then there's a section of the edge that is rolled and needs to be bent back to straight or removed.
If the edge isn't rolled, but is instead rounded then you just need to keep sharpening it until enough of the blade has been removed to reach a point on the edge. Don't be afraid to use a coarse grit for that. It is better to spend 10 minutes fixing the edge angle with 400 grit than it is 3 hours using 2k grit and still getting no where.
>>1614984Stropping/honing pastes are like from 2.5k to 30k. 8k is pretty much just average. The ease of slicing and chopping is radically different going from 2k to 8k or 8k to 30k. Most people never need anything past 8k unless it really is for a razor.
