I personally plant to harvest as much as I can find, then put some of them back into the ground and bury them for over wintering. They will pop up when they see fit and I'm sure some will stay in the ground unintentionally as well.

No I don't make oil because PUFA oxidizes fast, so I only try to eat it raw with minimal damage.

I mainly wanted them for their tap roots to work the soil.
They are pretty while they boom, and bees and insects love them.
It just so happened that this extended growing season let me finish the seeds on them as well, usually the frost comes in earlier.
As for calorie/meter crop thing, potatoes are one of the better choices. Assuming you aren't in a hot climate.
