These, these right here. These water cooled sharpening units are what you are supposed to use. They keep the metal of the blade, especially the very edge, cool to it won't heat up and ruin the temper.
If you start using a machine that isn't water cooled you are going to end up with all or parts of the very edge of the blades being annealed. This will also cause uneven wear over time because surrounding edge metal may not be annealed. The softer sections will wear out faster.
