Raccoons, field mice, and insects are by far the most persistent and numerous threats to rations when camping; opossums abound, too, but they seem to avoid scavenging human food out in the open, very probably because they'd have to compete with the raccoons for it.
During the day, crows will also confiscate your food if it's left unattended.
There are plenty of black bears here too, but I suspect that, because they feed so easily around these parts, they won't particularly seek out human-based food sources unless they grow used to encountering them (always trash nearby, deer corn in yard, etc.) or if your scent source is particularly blatant. I don't have any other explanation for why they're so much less of an issue than, say, raccoons and mice. Obviously there are more raccoons and mice, but surely not THAT many more.
