Have you considered growing oyster mushrooms? They don't need light to grow, since they aren't plants, so you can grow them in closets and areas without light where you couldn't grow anything else. I've heard of people growing them on shit like cardboard and shredded paper, but I have no experience with that and have no idea how nutritious those mushrooms would be.
