If you're buying expensive, soft stuff and still find it itchy and scratchy, then I'm sorry to say that either you're hypersensitive or allergic. You can still enjoy the benefits of wool if you have another fabric between your skin and the wool; I've got a surplus Hungarian army wool greatcoat with a satin lining. It's fucking FANTASTIC. It stops about six inches above my ankles, so it keeps my entire body warm. I've worked in below-zero weather wearing that and nothing else for warmth (just a long-sleeved t-shirt and 5.11 pants, no thermal underwear, sweater, or anything under it) and been perfectly cozy. It's very heavy, but you don't notice that while you're wearing it. Doesn't matter how cold and windy it is, it feels like you're still in bed and under the blankets. Being as it's lined with satin, the wool never touches your body. Something like that may be more your speed.
